
Hey Everyone! On the show, you may remember seeing my sisters and me preparing my signature dinner meal, CornFlake Chicken. While in New York for the True Life: Goes On Marathon shoot, I blessed the Producers with the recipe, which we have chosen to share with you….feel free to let me know how you made out, I will be checking back for your comments…oh, and Enjoy!
INGREDIENTS:
- Chicken (No specific portion or piece)
- Egg (1 per piece of chicken)
- Cornflakes
- Bread crumbs (Inexpensive Italian bread crumbs suggested)
DIRECTIONS:
- Preheat oven to 350
- Wash chicken thoroughly
- Dry chicken
- Beat eggs in bowl
- Roll chicken in eggs
- Place bread crumbs and crushed cornflakes in a bag
- Shake up contents in bag
- Drop chicken pieces in bag and shake until lightly covered
- Put chicken in ungreased pan and cover with leftover cornflakes
- Bake for 1 hour, or until center is no longer pink and cornflakes are golden brown
Suggested Sides:
REDSKIN MASHED POTATOES
INGREDIENTS:
- 1 bag of Redskin potatoes
- 5 tbsp of butter
- 1/2 cup of milk
- Garlic
DIRECTIONS:
- Wash and dry bag of potatoes
- Cube potatoes, leaving skin on
- Boil until soft
- Drain water from pot
- Measure out butter into seperate pan
- Sautee garlic to taste
- Pour milk into pot with potatoes
- Add butter and garlic mixture
- Mash until soft
Note: Canned corn or corn on the cob also make for a fantastic additional side!
And for dessert…‘PERFECT PIE’
INGREDIENTS:
- 1 box of yellow cake mix
- Canned fruit in light syrup (Peaches suggested)
- 1 stick of butter
DIRECTIONS:
- Preheat oven to 350
- Pour fruit in ungreased cake pan (don’t pat)
- Pour cake mix over fruit
- Cube butter and place on top
- Bake for 105 minutes or until golden brown
And there you have it, a delicious, budget friendly meal :O)
